Going there myself for the SEMA Show next week. People watching is good, no lack of things to see and do, Know when to hold them and when to fold them, leave credit cards at home, remember NOT everything that happens in Vegas stays in Vegas!

The Atomic Energy Museum on the campus of UNLV is interesting. If you have a car, it's a short drive to Red Rock Canyon Park. Scenery unique to the area. And if you watch the history channel, the Pawn Stars shop is a neat stop. Go down to Fremont St one night and see the sights, all free.
There's two days worth of free things to see just visiting each of the strip casinos. Lot's of free shows. Avoid driving on the strip on weekend nights. Far too crowded.
When I stay on my own ticket, I stay at Rio. Prices are good and food is great. Avoid gambling there, not very good. I prefer The Orleans. Rooms are also reasonable there but food not so good. South Point is a good place to stay to avoid the crowds on the strip.

There's a Ferrari store at the Wynn, as well as a Penske/Wynn dealership.
I always go to the store to see what is new. They always have cool engine parts from their F1 cars for sale.

Just came back from Vegas - stayed at the LVH and was really happy with the hotel.
Depending on where you stay the Tram is a reasonable way to get around and see allot.
The Imperial Palace has a car museum that is not free but worth the $11.95 entry. They have an Audi 5000 Trans-Am car, a couple of C4 Corvette Challenge cars on display and lots of vintage cars too look at. Also, most of the cars are for sale.
The shops at Ceasar's Palace are cool as are the Miracle Mile shops in Planet Hollywood. More than just malls
The Shelby Museum is free
The Bellagio water display is impressive and goes off every hour

I second the Atomic Museum - lots of displays and mockups of bombs and how they did the testing. We also liked the Liberace museum- cars and clothes-, but it might have closed as they were in financial trouble.
Nobody mentioned the indoor electric kart racing - it was pretty neat. They used transponders and recorded every lap of your session/race. (I think after just two sessions I was ranked 96th percentile of all the racers there!) Look for "Pole Position Raceway". It is west of the strip and the Interstate.
Hoover Dam is a half-day trip due to travel. The new Tillman bridge right next to it would be worth the trip by itself. The visitors to the dam are screened by Homeland Security, who are pretty harsh. Don't bring water, food, pocket knife, etc.
Try to take in several of the free outdoor diplays such as Bellagio water/light show and the "pirate ship battle" in front of (?) on the Strip in the evenings. Joel

The car museum at the Imperial Palace is well worth it. Its waaaaay in the back and not easy to get to, but you can spend a couple of hours in there. They have a range of cars from the old sedans from the 1920 to vintage race cars like a Jag D-type, up to more modern cars. Bring a camera.
